Rose uses a very detailed description of what his mother did on a regular basis to drive home the point to his readers. He wants us to see that working a blue-collar job requires a tremendous amount of brain power. And the reason it is so successful is because of the details it uses. When I read this specific paragraph, I can honestly imagine what Rosie was doing while she was working. How she adapted to new situations. How he could remember what each person ordered at the nine tables he was responsible for. Being able to know if something was taking too long to cook and checking in with the chef to see if there was a problem. These are just some of the problems that Rosie would face every day while working as a waitress. I believe that even today, maids are despised by most people. But they are hard working people and deserve respect for what they do
