It is known that the number and incidence of food-related diseases are rapidly increasing. What I find fascinating is that, unlike other diseases, the cause of these conditions can be a simple cure. By adopting a healthy lifestyle, food choices act like medicines in the prevention, treatment and regression of diseases. Food should be the recipe for society's well-being. Science is the subject I have always had a passion for, and biology was my favorite subject throughout high school. After developing secondary lactose intolerance in 2012, my broad interest quickly catalyzed into one specific area. My new dietary needs led me to constantly check food labels, increasing my awareness of what products were in them. I began researching apparent causes and cures as well as learning about lactose intolerance in the biology of AS. The articles caught my attention about the benefits that specific ingredients had on the human body. My curiosity led me to purchase chia seeds, goji berries and ginkgo biloba to see if I noticed any obvious differences or if the positive reviews were due to the psychological effects of the cleverly marketed packaging. I desire the knowledge to understand and the ability to judge the truth behind these statements. Watching the lecture “Sugar: The Bitter Truth” I was introduced to high fructose corn syrup which causes leptin resistance so the brain fails to control food intake leading to weight gain or obesity. With obesity and diabetes reaching new heights, I wondered how anyone could justify using such an ingredient when less controversial alternatives exist. I started to notice the importance of certain vitamins and supplements and the direct positive effects. It gave me an insight into working life in a hospital environment, allowed me to gain communication and confidence skills and gave me a sense of responsibility. I want to gain valuable knowledge and experience that will allow me to be at the forefront of nutritional research that is becoming more important every day. By contributing to this research I want to make my chosen university proud and help the public improve their quality of life. I am a very committed and hard-working student with high aspirations for the future, which is why university is the ideal place for me. I want to work hard towards a topic I am passionate about and I am determined to succeed and achieve my aspiration as a nutritionist.
